Sake

Sake is an alcoholic beverage, made by fermenting rice. Sake is dated to more than a thousand years ago in Japan and over time Sake has evolved into an extremely refined beverage. As Sake is intended to be a social drink, there is a Japanese custom that you shouldn’t fill your own cup of Sake, someone else at the table must pour it for you. This is to ensure you always drink with friends. The traditional toast for Sake is “Kanpai!”

Junmai
Junmai means ‘Pure rice Sake’. Brewed using only rice, koji (mould), water and yeast with no additives. Considered a good food match due to its richness and strength of flavour.

Ginjo
Made with rice polished between 51% – 60%. A premium level sake.

Daiginjo
Made with rice polished to at least 50% (often much more). An ultra premium level sake.

Honjozo
These sakes have brewers alcohol (jozo) added in the final stages of production. This results in a lighter, drier sake and also accentuates its delicate aroma.

Muroka
Meaning unfiltered. It refers to sake that has not been carbon filtered, but which has been pressed and separated from the lees, and thus is clear, not cloudy. Muroka sake often has stronger flavours and odours than filtered varieties.

Nigori
Cloudy sake. Partially filtered to retain some of the rice sediment that provides a chalky or rich creamy mouthfeel depending on the degree of filtration.

Nama-Chozo
Pasteurised only once, after a 6 month maturation period (most sake is pasteurised twice), resulting in a livelier, more aromatic sake.

Genshu
Undiluted, full strength sake (most sake is diluted with water to lower the alcohol content). Genshu are typically heartier in flavour and body.

Yamahai
A traditional method of making sake whereby the koji (mould) is allowed time to sit and dissolve the rice over a longer period of time than other methods. Yamahai sakes typically display a wild or gamey flavour.

Brown sugar and cocoa aromas with quince paste, vanilla and roasted almond flavours. When heated the sweetness is more pronounced making it a great dessert option especially in winter.

Shochu

Shochu (Fiery Spirit) is a clear distilled spirit made from a variety of base ingredients, but commonly rice, barley, sweet potato and wheat. It has a higher alcohol content than sake, generally 25-30% by volume, and can be had neat, over ice, with hot or cold water, or a mixer.

Kaido Imo Iwai No Aka (Celebrating Red) Sweet Potato
Kaido Imo has an extremely heady nose with sharp fruit notes, a full rich alcohol glow on the palate with mineral traces of the sea and earth from which it came from. This shochu is best served at room temperature to make the most of its distinct sweet flavour.

Kakushigura Mugi has a warm, smooth nose with an earthy oaky flavour and mellow hints of barley and golden straw. Similar in flavour to a premium rye whisky, this shochu is an excellent digestif.
